Queensland Young Chef of the Year award 2015/2016 entries open

Nominations for this year's Brisbane Times Good Food Guide Young Chef of the Year award are now open.

The award is designed to highlight and reward our most passionate younger chefs. Applicants will be judged by a panel of chefs and restaurateurs including the chief judge, Aria Brisbane executive chef Ben Russell.

What does Russell consider the vital qualities in a young chef? First and foremost, he says, is a "commitment to excellence".

"Definitely there has to be natural ability, but a strong work ethic and motivation are equally important. We're looking for someone who can balance technical ability and creativity with a practical, driven approach. Someone who has the capability to make a significant contribution to the local dining scene in the future."

Last year's winner, Ben Devlin, is finding success with his recently formed business, Beerkary Bakery, a pop-up concept bakery with a beer focus.

Russell and fellow judges Ryan Squires from Esquire, and Philip Johnson, from E'cco Bistro, will shortlist six applicants.

The finalists will then undergo a rigorous interview process and show off their skills by cooking for the judges.

The winning chef will be announced in June and presented with the award at the Brisbane Times Good Food Guide 2015/2016 award ceremony on June 29.

A Young Chefs' Dinner will feature the six finalists, who will each create an original dish for the one-off collaborative dinner at Aria Brisbane on July 14.
