The Mexican fiesta is over at Avoca on the central coast. High-profile restaurant Rojo Rocket has closed and will be replaced by a new eatery from the former head chef at Manfredi at Bells.

Chef Cameron Cansdell and wife Hayley will launch Bombini on October 3, focused on organic dining.

A 0.8-hectare fruit and vegetable garden will provide produce as well as honey and chickens for the new restaurant.

Big Day Out founder Ken West fronted the team that opened Rojo Rocket in 2009. West is scouting Sydney sites for a new Rojo Rocket launch pad.
