Sale set to fund Hugos' interstate expansion

Scott Bolles

With Bayswater Road's Concrete Blonde restaurant shutting its doors last week, the idea of a ''for sale'' sign at Hugos and its sibling, Hugos Bar Pizza, won't do much for confidence on the strip.

But Hugos co-owner David Evans says it is just the property for sale and he wants Hugos and the pizzeria to remain the long-term tenant. With hopes of over $10 million expected from the sale, Evans scotched rumours some of it will be used to pay out his brother, celebrity chef Pete Evans, who has left Hugos.

''That deal is already done,'' David says.

He says the money will fund Hugos' expansion into Brisbane and Perth.
