Fancy the idea of a deconstructed prawn cocktail while cruising in a little Aristotle Onassis-style floating luxury? Keep reading.

It took longer than the First Fleet, but the 42-metre Seadeck (pictured) is about to ply its trade on Sydney Harbour. After an arduous voyage from the eastern Mediterranean, the hospitality ship docked here late last year before Alex Zabotto-Bentley gave its interiors a once-over. Executive chef Drew Bolton, who has a day-land job at Vine in Double Bay, will focus on lighter-style food rather than heavy fare that might make punters seasick.

"It's pretty big, so thankfully it doesn't rock much. We'll just do events and parties [over coming months], but in spring we'll open it up to the public," Bolton says.

That's when the modern, deconstructed prawn cocktail will make its maiden voyage. How about putting on a few dishes from the Titanic menu? "We wouldn't want to jinx it, but that's not a bad idea," the chef says.
