We've had a sneak peek at the menu from Bentley Restaurant & Bar wine bar spinoff Monopole, and we like what we see: grilled scampi with hazelnut butter, amaranth cooked in milk with heirloom cauliflower, and blue mackerel with puffed wheat, dried capers and pickled raisins.

Monopole opens today at 71A Macleay Street, Potts Point, a building that only a few years ago had a high-priced fitout for its short-lived spell as Sailors Thai Potts Point.

Melbourne designer Pascale Gomes-McNabb is responsible for the Monopole look - a dark, moody, 50-seat eatery-bar.

''It's a grown-up wine bar,'' says Nick Hildebrandt, who isn't lamenting the one that got away - the site at the Grace Hotel in the city where they came close to opening. ''Maybe it's a blessing in disguise. We think we could've done pretty well in the city, but this one is smaller and more manageable. There's also a demographic and sophistication to Potts Point we really like.''
