South Bank's Aquitaine restaurant sells to Spiro Dimopoulos

Aquitaine restaurant at South Bank is set to change hands.

Owner Nick Pinn expects to hand over the keys to a new owner in the last week of May.

"I just have too much going on over this side of town and getting to South Bank is becoming harder and harder," Pinn says.

"I like to be involved in the business, it's such a beautiful location and deserves more attention than I can give it."

In addition to Aquitaine, Pinn owns Malt Dining in the CBD, two Malt Traders in Fortitude Valley and the CBD and - the latest in his portfolio - Malt Pier at Newstead.

Plans for expansion will continue in March next year, when Pinn is opening a third Malt Traders in Queens Street that will offer both retail liquor sales and a large al fresco eating area.

He also has another project in the works - a bar in Newstead. "It's about not putting all my eggs in the one basket," Pinn says.

The new owner for Aquitaine is Spiro Dimopoulos, who has a background in hospitality in bars and pubs in Sydney. Dimopoulos quietly checked out his future purchase, doing a bit of undercover dining at Aquitaine before putting in an offer.

"When I found out it was for sale, we went there for dinner and I was really taken with it - with the level of the food," he says.

"[I was] surprised by how passionate the chef and kitchen crew are. I'm looking forward to working with them all."

Dimopoulos says that everything will continue as is at Aquitaine, with all of the staff, including head chef Damon Porter, staying on and just a minor refresh of the decor.
