Steven Hiles takes over The White Horse Hotel

Steven Hiles, the creative operator behind the launch of Mosman's quirky wine bar, The Hunter, has tracked a new prey as well, The White Horse Hotel in Surry Hills.

''I've just signed a 12-year lease," says Hiles, who plans a his-and-her redesign that will include an American motorcycle-themed bar on the ground level and a cocktail and champagne bar on the first floor.

Hiles takes control of The White Horse early July, closing it for a four-week Matt Woods redesign.

Former Merivale chef James McCall will oversee the menu. "Downstairs we'd like it to be a hard bourbon bar," he explains.

The White Horse has a colourful history, having had spells under restaurateur Gerry Nass as well as Home nightclub founder Ron McCulloch.

Hiles is keen to give it new direction. "You've only got to look at the Drink n Dine Group and what they've done with pubs. That's the way forward," he says.
