Bored of dried out hotel burgers and oily chips? Imagine a room service menu with duck liver parfait and a ham toastie with Midnight Moon goat's milk cheese, prepared by an award-winning chef.

Well, from this week that's what guests will be snacking on at the newly opened 57 Hotel in Surry Hills.

And if chef Darrell Felstead, who has picked up chef's hats in the past, is correct, it's the way of the future.

"I wouldn't open anything anymore without a bit of fat on it. You need different ways to find new customers, and this is one way of doing it," says the owner of Foveaux St Dining.

The chef, who can deliver a meal to a room in the neighbouring hotel in three to four minutes, has further integrated his business by allowing hotel guests to charge an eat-in meal at Foveaux back to their room.
