The dominos are starting to fall in place at Barangaroo, with sherry-heavy Circular Quay wine bar Tapavino opening a spin-off in September at the waterside development.

The news follows hot on the heels of another key Barangaroo signing, with the owners of the award-winning Bentley restaurant committing to a seafood restaurant at the site.

"Because it's on the water, the food will lean heavily toward Galicia, in Spain's north-west," says Tapavino owner Frank Dilernia​. He confirmed the venue will be named Tapavino Barangaroo and will follow the sherry and Spanish wine formula of its quayside cousin.

Dilernia is taking a high-end punt on the city market too, with a third venue – restaurant and wine bar Balcon by Tapavino – opening on Bligh Street mid-year.

"Opening two is going to be a little more stressful, but the location at Barangaroo is great," he says. "We have one of the larger venues, it's between the site of the current Noma pop-up and Matt Moran's building."
