Sydney gelati operators are coming to town.

N2 Extreme Gelato is a shmick business that makes gelati-to-order and opened just over a week ago at 329 Brunswick Street, Fitzroy.

N2's Min Chai and Ann Gee Yeoh have created a concept where you order your gelato and it's made for you in about 30 seconds by adding liquid nitrogen to a flavour base and combining all the ingredients in mixers sitting along the shop counter.

The gelato is served at about minus 6 degrees. Flavours include miso caramel in a milk-based gelato, and ''The Walrus'', rose syrup, pistachio and cocoa nibs.

In other gelato news, Sydney's hugely popular artisan gelateria, Gelato Messina, is coming to 237 Smith Street, Fitzroy, in November.

Its Sydney stores have queues out the door, winter and summer, and Melbourne's flagship in Fitzroy will feature Messina's signature 40-flavour cabinet.
