This spring carnival at Flemington the only thing bigger than the hats will be the profile of many of the chefs in the Birdcage.

Mark Best, of Marque in Sydney and Pei Modern in the city, will be feeding the guests of the Mumm Marquee; Nicky Riemer and Adam Cash, of Union Dining in Richmond, will be heading up the Gucci Private Suite in Flemington's Hill Stand; Lavazza are staying true to the mother country with Tony Nicolini's DOC, Chris Lucas's Baby and Giovanni Pilu, of Pilu at Freshwater in Sydney, feeding their invitees. Guests of the Lexus marquee will have their own pop-up restaurant from Flinders Lane bar, Hihou. Downstairs, Neil Perry will present dishes from his restaurants Spice Temple, Rosetta and Rockpool, and, oh, there's a horse race or two on too.
