Three Italians stage feast at Benedict House

Two young Italian cooks on a two-year working visit to Australia are teaming up with Sam Pauletto from Benedict House in Queanbeyan to cook a lunch at Benedict House on Sunday, June 23.

The Three Young Italians lunch includes an antipasto platter with pecorino, pear and truffle honey, arancini balls, and cured meats. Then potato and chestnut gnocchi with sage; handmade cannelloni; and pork stuffed with spinach and ricotta and wrapped in pancetta.

For dessert, there’s a chocolate and pear tart. Kate Shelton, from Benedict House, says the young men from Rome, Gabriele Luchetta and Gianluca Albert, in their early 20s, have been working on the menu for months, consulting their mothers and nonnas via Skype.

They linked up, she says, through her brother, Matt Shelton, at the Hotel Realm, where they also work. $65, including wine, bookings 6284 2868.
