A great restaurant industry needs a succession plan. Part of the NSW Food and Wine Festival presented by Citi is this Tuesday's Rising Stars dinner, featuring not one but five young chefs, young sommeliers, young winemakers and up-and-coming food producers.

"The idea," says festival director Joanna Savill, "is to encourage the new generation of Sydney - and regional - stars to forge vital links across the food and wine chain."

There will be five courses from Chiswick 's Richie Dolan and fellow next-genners at Sixpenny, Ester, Biota Dining and Nomad. Wines are by fledgling sommeliers (from Aria, Rockpool Bar & Grill and more), and up-and-coming winemakers from Logan, Tertini, Briar Ridge, Eden Road and Peppertree.
