Top of the pop-ups

Kris Wood from South Melbourne's Clement Cafe and chef Andrew Gale (Duchess of Spotswood/St Ali restaurant group) are opening what could be the longest-lived pop-up cafe in the city.

The two have taken on what was Cafe 53 at, funnily enough, 53 Flinders Lane, and are calling it Duchess Clement Trading Co.

The lease of the business is owned by entrepreneur and St Ali owner Salvatore Malatesta, who has given the pair between one and two years to utilise the venue, ''until he wants to use it'', says Wood, who will be roasting his own beans for the venue.

The menu will be ''very Andrew: English-influenced like the Duchess of Spotswood'', he says.

A liquor licence is in the pipeline; you can expect it to open by the end of July.
