Ty Bellingham cuts ties with Sailors Thai

The Sydney chef who spent two years at the helm of Kittichai in New York City before coming home to be head chef at Sailors Thai has quit his post. Ty Bellingham, who worked his way up the ladder at Sailors Thai - when it was still in the hands of David Thompson - before departing for the US, says he left for a number of reasons.

"It was 50 per cent me and 50 per cent the place,'' he says. ''I was told a number of things were going to happen, money spent on it. And while I think it will be done, I was sick of waiting."

Bellingham also concedes it was difficult going back to Sailors Thai after having worked there in the heady reign of Thompson, who last week saw his Nahm restaurant in Bangkok anointed Asia's best.

Bellingham, who had been back at Sailors Thai for 12 months, wants to spend more time with his young family and has a chance to use his skills in a new business offering work placements in the hospitality industry to refugees and asylum seekers.
