Vlassopoulos moves to Pei Modern

Ari Vlassopoulos is now general manager of Pei Modern. Vlassopoulos' front-of-house management experience is a roll-call of high-profile Melbourne restaurants, including stints at Pearl in Richmond (now Baby), Cafe Di Stasio and, most recently, Guiseppi Arnaldo and Sons at Crown. Manager and sommelier Ainslie Lubbock will be able to focus on service and the wine list. Co-owner of Pei Modern, Sydney chef Mark Best, says: ''Our aim with Pei was initially a wine- and food-focused venue and we want to realise that ambition.''
