Waterloo's Danks Street Depot to close

Danks Street Depot, the cafe-restaurant that pioneered the transformation of semi-industrial Danks Street, Waterloo, into a leading Sydney eat street, will serve its last spanner crab salad in February.

Co-owner Jared Ingersoll confirmed the Depot's last supper is February 3. The news follows hot on the heels of Christine Manfield's announcement that she will close her twin-toqued Universal restaurant, in Darlinghurst, at the end of April.

Like Manfield, Ingersoll says he wants to devote more time to other interests.

"I want to expand my work with primary industry, and do some more writing and speaking engagements. I've been pushing the pans for going on 27 years and I've got young kids, so it's also a lifestyle change," Ingersoll says.

The chef explains it has become more difficult to run a restaurant in Sydney.

"The environment is much more demanding than when we opened 11 years ago. Compliancy costs have gone up, running costs have gone crazy, and there is much more competition than there used to be. The carbon tax means it costs me seven times what it did to gas my fridges," Ingersoll says.

The good news is Danks Street Depot's Sydney Airport spin-off at T1 is "going off" and will remain open.

Sydneysiders will still be able to get Danks Street's signatures, just not on Danks Street.
