Sugar fiends have a good reason to get up early on Sunday, as the Flour Market is on at Sydney Boys High School.

From 9am (or earlier if you snapped up one of the Early Riser tickets), you'll be able to supercharge your Valentine's Day with sweets from Brewtown Newtown, Brickfields, Grumpy Donuts, Oregano Scrolls and more.

There's also a guest appearance by out-of-towners Butterbing, known for "Melbourne's OG brownie cookie sandwich" and shilling its fresh-baked goods in flavours such as espresso, Nutella and peanut butter. The company will be trying to convert you to the Butterbing cause by enticing you with its entire range, as well as special edition sweets like a caramelised white-choc-filled cookie sandwich and Butterbing's take on the Golden Gaytime.

Other special sweets include Flour and Stone making salted caramel eclairs, Andy Bowdy offering jar-sized versions of his blockbuster cakes and Black Star Pastry's Valentine's-Day-appropriate coeur a la creme.

Bowdy's full-scale cakes have been ruling Instagram (and the feed of his 42,000 followers) for years now, but he decided to make mini versions for Flour Market for people who didn't want to commit to a multi-tiered dessert that requires two people to transport (and a week's advance ordering).

His mega cakes blitzed our list of Sydney's Top 10 Cult Desserts, so if you want to know why his ganache-and-mousse-lavish spectaculars took out the number one spot, you better line up for the fun-sized versions of his torched-meringue-topped Grace and Tony cakes.

Meanwhile, Black Star's offering comes with a sugar-laced history. "Coeur a la creme was a pretty chic dessert in the 80s," says Christopher The, who worked at Claude's, Victoire and Quay before opening Black Star Pastry. "I used to make it in my Claude's days."

"Chui [Lee Luk] gifted me the moulds when she closed down the restaurant," he says. "I think it's time for a revival. [It] tasted good then and still tastes good now!"

Even though his team won't be using the Claude's moulds for every one of the cakes planned (as, logistically, they won't have enough for the large volume scheduled), all the desserts will still look "sensational", he says.

Black Star Pastry's version of the coeur a la creme will be made from creme fraiche and meringue, topped with petals and herbs, and each cake will hide a rose champagne jelly. It's enough to make you want to obey your alarm clock on Sunday morning.

The Flour Market is on Sunday February 14 at Sydney Boys High School. General admission is $2 and pastries will be sold from 9am until they sell out (which is often very quickly).
