Ice-cream 'baoger' on the menu at the Sydney Night Noodle Markets 2015

It's an ice-cream sandwich, but not as you know it. From the man that brought you the controversial ramen burger (that frankensnack combining a ramen noodle "bun" with a burger patty – it's either the best or worst of both worlds depending on which side of the fence you're on when it comes to splicing popular dishes) comes the ice-cream "baoger".

David Yip, who first brought the ramen burgers to the Night Noodle Markets back in 2013, says he's always looking to push the envelope and find new ways to keep his customers interested and excited.

"The general theme of my burgers/baogers is the infusion of cultures, textures and tastes," says Yip who opened his very first restaurant, One Tea Lounge and Grill this year. The restaurant offers all the hits of the Night Noodle Markets and plenty more.

But back to what could very well be the standout cult hit of this year's markets.

Expect a sweet, deep-fried bun served hot and spread with red bean paste. It's then contrasted with the coolness of green tea, black sesame, red bean or lychee ice-cream.

The Night Noodle Markets, which launch on Thursday October 8 in Hyde Park with a record 50 stalls, will also feature the likes of whole Philippine-style suckling pig on the spit from market mainstays Hoy Pinoy (yes, they'll also be doing their signature skewers), and a dessert collaboration between Black Star Pastry and N2 Gelato. If you haven't seen these guys at work before, they make ice-cream a la minute with the use of liquid nitrogen.

Longrain will also have a stall and will be joined by sister restaurant Subcontinental. And if that's not enough, Lil Manhattan will be serving up Korean bagels.

On an international scale, Momofuku Milk Bar's star pastry chef Christina Tosi is in town from Manhattan to launch the Singleton Whisky & Sugar Bar. She and the team have had their work cut out for them, baking no fewer than 50,000 whisky cookies to serve at the Milk Bar pop-up.

Last year boasted a record attendance of nearly 500,000 noodle lovers but the queen of crack pie and fun cakes, who will be present all evening serving up her irreverent baked goods alongside whisky cocktails, may just tip the scales.
