Evidently, roving Filipino caterers Hoy Pinoy are serving up five pigs on a spit each night at this year's Melbourne Night Noodle Markets.
The markets, part of The Age Good Food Month presented by Citi, have taken up a new location at Birrarung Marr Park.
The riverside park has been transformed into a street-food haven, with some of the city's best-loved Asian restuarants, cafes and food trucks gathering nightly to dish out everything from Pad Thai to pork buns, yakitori and yellow curry.
Hoy Pinoy offers market-goers a taste of the Philippines, including extra-long pork skewers glazed with one of the Philippines favourite condiments, banana ketchup.
Restaurant Longrain, which has hatted Thai restaurants in Sydney and Melbourne and a reputation for rigorous authenticity, has returned, as well as city hotspot Chin Chin.
The markets feature more than 50 food stalls and food trucks offering cuisine from Korea, Vietnam, China, India, Malaysia, Burma and Nepal.
When the markets came to Melbourne's Alexandra Gardens for the first time in 2013, twice as many people as expected flooded the venue and the crowd totalled 283,000 over 13 days.
In Sydney last month, more than 550,000 people thronged Hyde Park, which was filled with glowing lanterns and stalls selling everything from ramen and dumplings to artisan ice cream from Gelato Messina.
Since this year's markets opened at Birrarung Marr, more than 100,000 people have streamed through the gates to taste the offerings from popular newcomers - Kong, Red Spice Road, Charlie Dumpling and Mr Miyagi.
Red Spice Road's five spice pork belly with chili caramel sold out on the first night.
Dessert can be had courtesy of Gelato Messina. The gelateria expects to sell 6000 scoops per night.
Also, for the first time there is free wifi available on site.
