N2 Extreme Gelato coming to Canberra Night Noodle Markets 2015

The Enlighten Night Noodle Markets are getting a dose of liquid nitrogen gelato starting February 27. Sydney-based N2 Extreme Gelato is heading for the capital - and they're bringing 3000 litres of liquid nitrogen with them to create gelato from scratch for diners. The popular dessert outfit started just two years ago in Sydney, with lab coat-wearing "technicians" using nitrogen to make gelato on the spot to order. It's since expanded to Melbourne.

Founder AnnGee Yeoh says she and her team will be serving up at least two flavours in Canberra, each order made "live" using nitrogen to instantly freeze the milk and other ingredients. The first flavour is vanilla gelato with honeycomb and a syringe of caramel known as "Brokeback Moment" (cheeky and often downright naughty flavour names are a hallmark of N2). The second is nutella gelato with rice bubbles and hazelnut and a syringe of chocolate ganache ("Ferrero Revealed").

Yeoh says N2 Extreme Gelato gets plenty of interstate customers, including Canberrans, and the Night Noodle Markets are a good way of meeting interstate demand and taking the nitrogen gelato to big events. "We've been wanting to do events for quite some time and this will be one of the biggest ones we've done," she says. "Since the Canberra Night Noodle Markets is the next one round the corner so we thought we'd give it a go. It's been a bit crazy because of organising the logistics."

Her events team, whom she laughingly described as "very fit young team", will be kept busy making gelato for Canberrans all through the Enlighten Night Noodle Markets, which run from February 27 to March 8 on the lawns between Questacon and the National Portrait Gallery, in the midst of the colourful Enlighten festival. "We get a lot of Canberra customers coming to Sydney and they've been asking us to do the markets in Canberra and Perth. We love travelling to places, " she says. "In a way the Night Noodle Markets is a great way to test the market, to meet people face to face and talk to them."

The Night Noodle Markets are coming to Canberra for the first time this year, after the very popular Night Noodle Markets which draws hundreds of thousands of people in Sydney and Melbourne. They will be held alongside the Enlighten Festival where cultural institutions and galleries are lit up with vivid, colourful projections, and will be accompanied by Good Food Month events in Canberra in which restaurants hold special dinners or lunches. The markets are run by Fairfax, publisher of the Canberra Times.

The Enlighten Night Noodle Markets will be held in Canberra from February 27 to March 8 on the lawns between Questacon and the National Portrait Gallery. Markets open 5pm daily. See canberra.goodfoodmonth.com
