More noodles, the latest flavours, bright lights and a beautiful new location - the Night Noodle Markets return to Perth and we've got your tastebuds covered.

The Hawker-style food festival will light up Elizabeth Quay for 12 nights, with 26 seasoned experts from around Australia setting up shop in Perth to show off their signature street-food dishes.

Perth foodies couldn't get enough at last year's inaugural event and the same sizzle is back in 2016, along with new Asian-inspired dishes and flavours.

Lick your chops while seated at the special spots set up along the Quay and wash it all down at one of the funky pop-up bars from Coopers, Yalumba and Thatchers.

Try as you like, it'll be virtually impossible to get a taste of everything on the menu, so we've eased the heat a little and listed some signature dishes which will be showcased from 22 of the 26 stallholders.

Running nightly from March 30 to April 10, the Night Noodle Markets is the signature event of WAtoday Good Food Month.

Apple Daily Bar & Eating House
Above Print Hall and named after Hong Kong's popular daily newspaper, inventive south-east Asian street-style food is their thing. Try their grilled Linley Valley pork spare ribs at the Night Noodle Markets.

Banana Leaf Filipino Cuisine
Stationed in Subiaco, try their succulent whole pig on a spit at NNM.

Bangkok Jump Street
Perth pop-up serving up spicy pork skewers and coconut prawn skewers.
