Good Food Month's Night Noodle Markets has a growing reputation for spawning bricks and mortar venues, with Trunk Road being the latest to pull up to the curb with a permanent home.

The Indian street food stall will feature when the Night Noodle Markets rolls into town this Thursday before opening a permanent venue early next month at 165 Crown Street, Darlinghurst.

Trunk Road isn't the first. David Yip found food fame with his ramen burger at the markets, dragging his edible highwire act in from the cold in June with the launch of a York Street restaurant, One Tea Lounge.

"Our signature at Trunk Road will be the Trunk Roadie, our interpretation of a traditional kati roll [skewered meat wrapped in paratha bread; versions include butter chicken, steak and cheese, lamb and paneer]," says Nicholas Gurney, who also owns Bang restaurant in Surry Hills.

"We'll also do breakfast [at the Crown Street venue] and a few other things like tandoori chicken wings. Indian chai tea, but no coffee. The area already has enough coffee."
