And now Canberrans can look forward to sampling Asian street food from Brisbane, Melbourne and home during the markets.

Zagyoza is a cult Brisbane gyoza store in the West End and served up 50,000 Japanese dumplings at the Queensland markets in 2014. They will be heading to Canberra this year with a menu of six different gyoza – a classic pork, chicken teriyaki, a Tokyo curry described as "mild and fruity beef curry", pumpkin and fetta, a seafood dumpling and a vegan black bean dumpling.

Filipino barbecue merchants Hoy Pinoy are also heading up from Melbourne to serve up thousands of traditional pork and chicken skewers. Hoy Pinoy is usually to be found at the Queen Victoria Markets and owner James Meehan says he is keen to come to Canberra and spread the word about Filipino barbecue.

"We've done a couple of gigs with Fairfax and the Night Noodle Markets – we started off in Melbourne a year ago, and moved on to Sydney and they were both extremely successful markets.

"So when we heard they were expanding the Night Noodle Markets franchise, we thought it would ba great way to showcase the Filipino food around the country," he says.

Hoy Pinoy will serve up pork belly skewers with a banana ketchup glaze and chicken skewers with a cane sugar glaze – all barbecued over live coals at the markets.

And we can also look forward to seeing home-grown talent at the markets – there'll be noodles from Thirst, the casual Thai wine bar and eatery from Jeff Piper and Justin Kavanagh in Civic.

The Enlighten Canberra Night Noodle Markets run from February 27 to March 8 on the lawns between Questacon and the National Portrait Gallery. Go to canberra.goodfoodmonth.com
