New chef for North Bondi Fish

The last time chef Paul McGrath was between restaurant jobs one of his customers, Aussie Home Loans chief John Symond, snapped him up as his personal chef. McGrath, who departed Ananas in September, has stepped into the head chef job at North Bondi Fish. McGrathearned his stripes and a hat stand of awards at Bistro Ortolan in Leichhardt, and wants to inject some fresh excitement on the menu. "I've just had five kilos of sea urchin arrive from a diver in Cronulla. We'll serve it with coral trout, green apple, lime juice and seaweed toast," he says. McGrath says he still wants to maintain the restaurant's current price point and has no plans to ditch crowd-pleasers such as the flathead, sliders and tacos.
