A who's who of restaurateurs have eyed Rockpool restaurant's former digs on George Street, including Melbourne's Chin Chin, (which is keen to expand to Sydney). Now the William Blue College of Hospitality Management is headed to the site. The hospitality college is opening a new campus at The Rocks but its restaurant and bar aren't ready to roll, so the college will open a pop-up restaurant – serviced by lecturers and students -- at the former Rockpool site on February 23. A William Blue spokesman says the restaurant will operate for 12-18 months before moving to its permanent home.
