Lester and Adrienne Jesberg begin their next six-night wine course on February 17. They use about 70 wines in the tastings, focusing on which to cellar and which to open now, and on wine faults, so you can pick when a wine is not right.

It also covers palate structure (acids and tannins), the major varieties, and how oak affects wines. Lester Jesberg is a wine show judge and runs the Winewise magazine.

The course runs over six Monday nights at the East Hotel in Canberra Avenue ($340, 0414 396 047).
