Brad Jolly keeps his signature beef cheeks on the menu year round; there would be an uprising if he didn't. Consistently good, they're tender and gelatinous and served with a fine example of butter-bombed mash. But not all on Jolly's menu is so hearty. Ocean trout is accompanied by a curious crumble; a trifecta of white chocolate, horseradish and salt. It presents as slightly savoury and results in an amusing match. Sweet apple puree, crunchy caramelised walnuts and bitter endive leaves are the resting place for glazed quail - another win. What pleasing service too; attentive, friendly, with sure-footed knowledge in food and wine. Put together with Jolly's menu and the riverfront location with Story Bridge views and Alchemy is a place to shout about. As dessert orders are called in, Jolly amuses diners with his floorshow of liquid nitrogen hocus pocus. Don't believe in magic? You'll be just as pleased with lemon souffle.
