Happy Cook delights with dishes such as 'mermaid's tresses', lightly fried shredded seaweed that hits the palate crisp before melting away; translucent, steamed dumplings; and marshmallowy souffle balls with a redbean centre. Chef Happy Kuk, who made the Guinness Book of Records in 1993 for pulling 4096 noodles in 45.14 seconds, runs the kitchen.
