Stale bread is processed into breadcrumbs and given a second run at the dinner table in the form of a deceptively simple pudding.

Ingredients

  • 4 slices stale white bread (about 150g)

  • 500ml milk

  • 100g caster sugar

  • 50g butter, melted, plus extra for greasing

  • 1 tsp vanilla extract

  • 3 eggs, beaten

  • 1 tsp baking powder

  • ½ cup strawberry jam

  • 300ml thickened cream, whipped, to serve

Method

  1. Step 1

    Heat your oven to 160C fan-forced (180C conventional). Using a food processor, process the bread to coarse crumbs.

  2. Step 2

    Put the milk, sugar, butter and vanilla in a small saucepan and bring to a simmer. Add the breadcrumbs and remove from the heat.

  3. Step 3

    Stand for 10 minutes, then whisk in the eggs and baking powder. Transfer to a greased 23cm x 11cm loaf tin.

  4. Step 4

    Swirl through the jam and bake for 45 minutes, until the pudding is set. Remove from the oven, scoop out of the loaf tin and serve with whipped cream.
