Banana ice cream with honey chocolate sauce

This ice-cream is rich with egg yolks so it stays creamy and scoops smoothly without ice crystals. It is stonkingly good, especially when you need a little soothing comfort.

Ingredients

  • You will need an ice-cream maker for this recipe.

  • 200-300g mashed banana

  • 2 tsp vanilla extract

  • 5 egg yolks

  • 125g castor sugar

  • 200ml semi-skimmed milk

  • 375ml double cream

Hot honey chocolate sauce

  • 75ml double cream

  • 125ml semi-skimmed milk

  • 25g cocoa powder

  • 50g honey

  • 100g dark chocolate, chopped

Method

  1. 1.Mash the banana onto a plate with the vanilla and leave to one side.

    2.In a mixing bowl, whisk together the egg yolks and sugar until very smooth but not too frothy. Set aside.

    3.In a saucepan, bring the milk and cream to the boil. Tip it into the mixing bowl with the egg yolks and sugar and whisk together. Once combined, tip this mixture back into the saucepan and heat until it coats the back of a spoon (about 80C). Put the mashed banana in the mixing bowl and immediately pour the hot saucepan mixture on to the banana and stir well. Leave to cool then churn in your ice-cream maker according to the manufacturer's instructions.

    4. To make the chocolate sauce, put the cream, milk, cocoa and honey in a saucepan, whisk until smooth then bring to the boil, stirring well. Remove from the heat and stir in the chocolate until melted, then warm to serve adding a little boiling water if needed to thin the consistency.
