You will be surprised how easy it is to make your own pretzels at home. Incredible straight from the oven, but also something different for the lunch box.

Ingredients

  • 500ml milk

  • 4 teaspoons (2 packages) dry yeast

  • 75g brown sugar

  • 100g butter, melted

  • 700g bakers flour

  • 2 tsp fine salt

  • 1/3 cup baking soda

  • 3 cups warm water

  • coarse salt

  • extra melted butter to brush

  • on top of warm pretzels

Method

  1. Warm the milk in the microwave or stove top until it’s at around 37-40°C. Add the milk to the bowl of your stand mixer or a large mixing bowl. Sprinkle the yeast over the milk and wait a few minutes until it begins to froth and bubble.

    Add the sugar, butter, flour and salt. Bring together and knead for about 10 minutes with either the dough hook attachment or your hands. The dough will be quite soft and sticky. Leave to rest in a warm place covered with a clean tea towel for 1 hour or until the dough is doubled in size.

    Preheat your oven to 220°C. Line a baking tray with baking paper.

    Mix the warm water and baking soda together in a shallow container and set aside.

    Divide the dough into 12 little balls. Take each ball and roll into a long thin rope. Form into a pretzel shape. Dip the formed pretzel dough into the baking soda solution then place on the baking tray. You’ll probably fit 3-4 pretzels per batch. Sprinkle each pretzel with coarse salt then place the tray in the oven. Bake for 7-9 minutes until golden brown.

    When the pretzels are baked, brush generously with the extra melted butter.
