A savoury cheesecake makes an interesting side-dish to a meal.
250g grated romano cheese
4 eggs
1 bunch of mint (chop leaves finely)
250g butter, softened
2 cups self-raising flour
Put the cheese, eggs and finely chopped mint together and mix well. Add butter to the mix and stir well. Mix in the flour. If the mixture is too thick, add some milk. Pour the mixture into a greased tin, preferably with a hole in the middle, and bake at 180C for about 50 minutes. Take out of the oven, turn on to a cake cooler and allow to cool.
