This Bankstown soup-er star keeps it simple with two main types of pho - classic beef and chicken - and just a handful of variations on each. They are doled out in a bright, big, canteen-style environment with head-spinning speed but they're everything generic fast food is not: tasty, hearty beef soup freshened up with crunchy beansprouts and DIY-seasoned with lemon and chilli. The chicken served with cooked egg yolks is fantastically rich, the broth showing the result of the many hours it takes to perfect. The brave may attempt the combo chicken option with heart, giblet and blood jelly but however you choose it's clear we have our very own super bowl, done Vietnamese-Australian style.
