The Chronic. This rib-sticking, collagen-rich, slurp-worthy tonkotsu ramen has earned its notoriety for good reason. Join the line of knowing faces who venture here to get 'the goods'. Several carcasses worth of pork bones and other secret ingredients are boiled down to an unctuous, salty broth, served with thin slices of pork, toasted nori and perfectly al dente noodles. The brave can supersize to 'the Mega', which adds robata-smoky pork ribs and belly and a squidgy tamago to boot, while a side of chilli-pickled cabbage cuts through the richness. Plump li'l gyoza are also worth ordering ... if you can fit it in.
