The Imperial chicken is a schnitzel topped with ham and shallots, with a delicious white sauce oozing out under grilled cheese. The coral trout en papillote is divine. Open the foil-wrapped parcel and you're hit with a mouth-watering mix of chilli, ginger, shallots and coriander, cooked perfectly.
