1. Barbecue
Soak corn in its husk in water and then barbecue on a grill, turning until the husks are charred on the outside and the kernels are golden in colour. Serve with butter and a little salt. Similarly, the corn can be roasted in its husk in a wood-fired oven.
2. Sweet corn and chicken soup
Simmer corn kernels with chicken breast and flavour with soy, garlic and ginger. Season with salt and pepper.
3. Corn fritters
Whisk together half a cup of buttermilk, two eggs, one cup of self-raising flour, salt, pepper and two tablespoons of chopped chives. Fold in a cup of corn kernels, fry in a pan until fritters are golden-brown. Serve with crispy bacon, avocado and sour cream.
4. Corn chowder
Add kernels to some fried bacon, onion and potato and, with milk and chicken stock, slowly simmer until tender. Season.
5. Roast
Place corn kernels in a heavy pan until golden brown and use as a pizza topping with bacon, garlic and sage.
