Piri piri marinade for barbecue chicken

This is a great, simple marinade for chicken on the barbecue. Wings and drumsticks are also easy, but I especially like to cook a small whole chicken, flattened on the barbecue. To do this, increase the cooking time to 25-30 minutes (for a 1kg chicken), and cover with a lid while it cooks.

    This is African style bbq's chicken, just because you add chips and serve it on a silly plate, doesn't make the idea european.

    This recipe should be called "Nandos style chicken." I'm not sure who decided that chilli and in particular piri piri is an ingredient in Portuguese cuisine because it's simply not the case. Most Portuguese will break into a sweat if there is too much black pepper on a dish, let alone cooked with chilli. Piri piri is a condiment that is used only occasionally and not particularly popular. It is quite popular in Angolan cooking and somewhat unsurpisingly the Nando's franchise originated in South Africa.

    If you want authentic Portuguese food you should be using Bacalhau (dried salted cod) because there is rarely a meal that doesn't include it in some incarnation.
