Despite the vast array of cheap eating options in Springvale, there’s often a queue here. What are they waiting pho? Pho Hung Vuong 2’s restorative Saigon-style noodle soup. Basic decor makes the pho the focus. There are ‘special’ soups, made with tendons and cartilage, but the standard versions (with chicken or beef) are pretty damn special already, full of pleasingly slippery rice noodles and tender meat swimming in slow-cooked, soul-satisfying broth.
