The striking New Orleans workers of 1929 would have laughed if told of plans to open an eatery dedicated to the ‘poor boy’ sandwich that gave them sustenance in hard times. That’s just what the team behind Gumbo Kitchen food truck has done. Fillings such as Cajun-battered catfish (basa) dressed with tomato, lettuce, pickles, mayo and Louisiana hot sauce; deep-fried shrimp (prawns); and smoked pulled pork bulge from crusty loaves; with sides of Cajun slaw, red beans and chicken and smoked sausage gumbo a nod to Louisiana roots. There’s lemon ‘ice-box’ pie (like a sorbet tart). Who’s laughing now?
