A crunchy salad to give tacos some extra freshness.
1/2 small cabbage, shredded
1/2 bunch coriander, leaves only
2 jalapeño chillies, roughly chopped
1 cucumber, peeled, de-seeded and cut into half moons
4 spring onions, peeled and sliced
extra virgin olive oil
Mix all ingredients in a bowl, dress with lime juice and extra virgin olive oil and season.
