Ingredients

  • 5 spring onions

  • 1 packet fresh baby corn cut in half lengthways (you can substitute one

  • small tin of baby corn)

  • 1 clove garlic

  • 1 small piece ginger

  • 3 tbsp peanut oil

  • small handful snow peas

  • 2 tbsp soy sauce

  • 1 tbsp chilli sauce

  • about half a packet tofu, cut in squares*

  • *tofu is sold in packets of about 300g - use as much or as little as you like.

Method

  1. Cut the spring onions into short lengths. If you are using fresh baby corn, microwave or steam for a few minutes until cooked.

    Crush or roughly chop the garlic and ginger.

    Heat a wok until very hot, add the peanut oil and the ginger and garlic. Stir, then add the spring onions and snow peas. Cook for a minute before adding the baby corn and the soy and chilli sauce.

    When the vegetables are cooked through, toss in the tofu and serve.
