Bourbon barbecue meatloaf

Cheap food isn't always good. But when we get it right, a meal made to a budget can be delicious as well as satisfying. Try this 'not-your-mother's meatloaf' slathered with barbecue sauce – it makes the most of a pricey protein such as meat, and gets its major flavour hits from what's already sitting in your cupboard.

Ingredients

  • 100g sourdough bread, crustless

  • 150ml milk

  • 250g spinach leaves, washed

  • Sea salt and pepper

  • 500g minced beef

  • 500g minced pork or coarse pork sausages, skinned

  • 2 rashers bacon, diced

  • 1 medium onion, grated

  • 1 tbsp tomato paste

  • 1 egg, beaten

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • Ssea salt and pepper

  • For the glaze:

  • 2 tbsp bourbon

  • 4 tbsp barbecue sauce

  • 4 tbsp tomato sauce

  • 2 tbsp maple syrup or honey

  • 1 tbsp mustard

  • 1 to 2 tsp chilli sauce

Method

  1. 1. Heat oven to 200C. To make the glaze, combine all glaze ingredients in a pan and bring to the boil, stirring until smooth. Set aside.

    2. Soak the bread in the milk for 10 minutes, then squeeze dry and finely chop. Pan-fry the spinach in a dry pan over medium heat until wilted. Squeeze out excess liquid and roughly chop.

    3. In a large bowl, mix the beef, pork or sausage meat, bacon, onion, bread, spinach, tomato paste, beaten egg, oregano, paprika and sea salt and pepper, kneading with your hands until well combined.

    4. Form the mixture into a loaf shape and place on a baking tray lined with baking paper. Coat with half the glaze and bake for 45 minutes, then coat with remaining glaze and bake for a further 20 minutes or until cooked through.

    5. Cut into thick, hearty slices and serve with mashed potato, rice or beans.
