Try this delicious recipe idea from Luke Mangan drawing on fresh seasonal produce.
1 orange.
1 grapefruit.
300g tin chickpeas, drained.
1/4 tsp cayenne pepper.
1 bunch rocket.
12 cherry tomatoes, halved.
Squeeze of lemon juice.
Drizzle of olive oil.
Sea salt.
Cut the peel from the orange and grapefruit, removing the pith as well. Cut the flesh into segments. Toss the fruit with the chickpeas and cayenne pepper. Add the rocket, tomatoes, lemon juice to taste, a little olive oil and a sprinkle of salt and mix gently. Serve immediately.
