A delicious accompaniment to grilled or roasted meats.
12 small, round, unpeeled potatoes
1 tbsp of fennel seeds
a few thyme sprigs
Preheat oven to 250C.
Boil 12 small, round, unpeeled potatoes then place on an oiled baking tray.
Smash each one flat with a potato masher, brush with olive oil, scatter with sea salt, pepper, a tablespoon of fennel seeds and a few thyme sprigs and bake for 30 minutes or until very, very crisp and golden.
