Cucumber gin and tonic

What could be more summery and celebratory than an icy-cold, minty, cucumber-green G&T? A bunch of odd-sized jars make great glasses-you-don't-have-to-worry-about. And don't forget the ice.

Ingredients

  • 500g unpeeled, unwaxed cucumber

  • 10 leaves mint, chopped, plus 4 sprigs

  • 1 tbsp castor sugar

  • 180ml gin

  • ice and chilled tonic water for serving

Method

  1. Finely cut 20 slices of cucumber, and roughly chop the remaining cucumber.

    Whiz the chopped cucumber in a high-speed blender with the chopped mint, sugar and gin.

    Strain through a sieve into a jar or jug, add the sliced cucumber, and refrigerate until needed.

    To serve, pour over ice, add the sliced cucumber and a sprig of mint, and top with tonic water to taste.
