Ingredients

  • 1/2 continental cucumber, seeded and finely diced

  • 2 tbsp coriander leaves, roughly chopped

  • 1/4 red onion, finely chopped

  • 1 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar

  • Sea salt and freshly ground black pepper

  • 12 freshly shucked oysters

  • Cucumber salsa oysters

Method

    1. In a bowl, combine the cucumber, coriander, red onion, olive oil and vinegar. Mix well and season to taste.
    2. Spoon on to the oysters and serve immediately.
