This is an excellent recipe from food stylist Caroline Velik, who makes it as a refreshing treat on really hot days.

Ingredients

  • 2 whole lemons, sliced

  • 1 handful ginger, peeled and sliced

  • 3 heaped tbsp brown sugar

  • 2L boiling water

  • 2 sprigs of mint, to serve

Method

  1. Place lemons, ginger and sugar in a large heatproof jug. Pour over the boiling water.

    Allow to cool to room temperature while the flavours infuse. Add extra sugar to taste if necessary, then refrigerate until cold.

    To serve: Put plenty of ice and a few mint leaves in each glass and serve.
