Macerating berries brings a nice acidity to the natural sweetness of the fruit.

Ingredients

  • 1 punnet blueberries

  • 1 punnet raspberries

  • 1tbsp castor sugar

  • 1 lemon, juiced

  • 1 vanilla bean, seeds scraped

  • zest of half an orange

  • ¼ bunch mint, roughly torn

Method

  1. Step 1

    Add the blueberries, raspberries, castor sugar, lemon and vanilla bean to a small bowl.

  2. Step 2

    Let sit for half an hour. Just before serving, lightly fold the orange zest and mint into the mix.

  3. Step 3

    Serve a generous spoonful alongside this strawberry and white chocolate almond cake.
