Ingredients

  • 125 g (4½ oz) unsalted butter

  • 115 g (4 oz/½ cup) caster (superfine) sugar

  • 1 egg

  • 210 g (7½ oz/1¾ cups) plain (all-purpose) flour

  • 125 g (4½ oz/1 cup) icing (confectioners') sugar

  • 60 ml (2 fl oz/¼ cup) hot water

  • 4 drops green food colouring

  • 1 packet liquorice allsorts, thinly sliced

Method

  1. Step 1

To make the biscuits (cookies), beat the butter, sugar and egg using electric beaters in a medium bowl until light and creamy.

  2. Step 2

Add the flour to the mixture. Using your hands, press the mixture together to form a soft dough. Turn onto a lightly floured work surface and knead for 2 minutes, or until smooth. Refrigerate, covered with plastic wrap, for 30 minutes.

  3. Step 3

    Preheat the oven to 180°C (350°F/Gas 4). Brush a 33 × 28 cm

  4. Step 4

(13 × 11¼ inch) baking tray with melted butter or oil. Roll the dough, between sheets of baking paper, to 5 mm (¼ inch) thickness. Cut into shapes using a 12 cm (4½ inch) people-shaped biscuit (cookie) cutter. Place on the prepared tray and bake for 15 minutes, or until golden. Leave to cool on a wire rack.

  5. Step 5

Place the sifted icing sugar in a medium bowl. Add the water and food colouring and stir until well combined. Dip the front of each biscuit into the icing (frosting), holding the biscuits over the bowl to allow any excess icing to drain away. While the icing is still soft, decorate the biscuits with liquorice allsorts. The biscuits can be made up to 7 days ahead and stored in an airtight container.
